Thanks to the hard work of Jeffrey Yarbrough, CEO of bigInk, October 26 is now officially recognized as Texas Chicken Fried Steak Day. State Representative Ralph Sheffield, Speaker of the House Joe Straus, and Chief Clerk Robert Haney signed the resolution on May 30, 2011. Yarbrough urges restaurants across the state to join him in celebrating this tasty and newly minted holiday.
As a seventh generation Texan, Yarbrough felt compelled to get the Texas favorite the attention it deserves, saying “No one does chicken fried like Texans; it’s about time we celebrate the soul food of our state…chicken fried steak.”
Last year, bigInk rallied with restaurants across the state to offer special deals and promotions to honor the dish. With the signing of the resolution, Yarbrough hopes to bring even more attention to Texas Chicken Fried Steak Day. The list of eager participants is growing by the day as restaurants across Texas learn the good news.
Yarbrough recently journeyed down to Austin, Texas to participate in the filming of “Cooking With Connally- Where You Become the Chef”. The show, created by Mike Erickson of John B. Connally High School, is a first-of-its-kind high school cooking series produced, developed and cooked by students. It is designed to give students a chance to interact with industry professionals while learning food history and culinary techniques. It will be aired on YouTube, the class and District websites, and local public access station Channel Austin. Yarbrough appears on the first episode of the show, entitled “Cowboy Cuisine – The Art of Chicken Fried Steak”, to talk about declaring State Chicken Fried Steak Day.
And where there’s chicken fried steak, there’s music. Jimmy Baldwin, the Richards Group creative director known for his soulful country tunes, has taken his love of all things chicken fried to a knew level by writing a song dedicated to- what else?- chicken fried steak. Baldwin will help celebrate Texas Chicken Fried Steak Day by performing “Peace, Love and Chicken Fried Steak” at a participating restaurant, to be announced.
